Ambitiously made in a serious vin de garde style, the Beaune Les Toussaints is large-scaled, powerful, muscular, and in need of 5-6 years of cellaring. The same can be said of the concentrated, spicy, hard Beaune Les Teurons. However, both of these wines possess the necessary flesh to cover their skeletons. All Mademoiselle Choppin's 1993 should turn out to be very good red burgundies. Furthermore, they are among the most modestly priced wines of the region. Unlike her more flattering 1992s, the 1993s require 3-5 years of cellaring. They possess fine color saturation, good body, very good to excellent flavor extraction, and the vintage's tell-tale, hard tannic structure.
