The Chassagne Montrachet Les Vergers has aromas of wet stones in the sunlight and a great minerally depth. In the mouth, its velvety texture is appealing as is its long stony finish. Drink this wine between 2000-2006. Amiot made his 1995s in the new cellars he built under his home and courtyard. With prefabricated vaulted and insulated ceilings, he now has the most modern and beautiful cellar for miles around. His '95s, while not blockbusters like his '92s, have the concentrated fruit of this vintage. In particular, they should be noted for good balancing acidity, something not everyone was able to achieve. This note is the result of tastings I did in Burgundy between January 7 and January 29.
