The 2015 Chablis 1Er Cru Fourchaume is raised in 50% wood (two to five years old) and 50% in stainless steel. It has a really quite superb nose, albeit one that aims for the subtle reductive style à la Coche-Dury. But they get it just right. The palate is fresh and vibrant on the entry, a pleasant fatness in the mouth. There is plenty of fruit here: white peach and a hint of grapefruit/nectarine, but the acidity is very well judged and the finish is so pretty and poised that you will not be able to resist its charms.
