The opaque purple-colored 2007 Cabernet Sauvignon Minnick Hills Reserve comes from a particular parcel in the Minnick Hills vineyard. Aromas of wood smoke, spice box, violets, and blackberry inform the nose of a large-scaled, round, powerful Cabernet. On the palate hints of mocha and chocolate emerge along with plenty of spice and savory black fruit flavors. Dense, rich, and layered, it has plenty of ripe tannin that will allow it to evolve for several more years. It is likely that the additional time in bottle will result in a more nuanced wine.
