From young vines in a parcel above Chaignots and Bousselots that he acquired in 1999 and considers Corton-like, Chauvenet’s 2005 Nuits-St.-Georges Aux Thorey displays pure, concentrated aromas and flavors of cassis against an overtly chalky backdrop. Rich and satisfying on the palate, it appears based on sampling various barrels as well as an approximation to the final cuvee, as though this will turn out to be slightly woody in character. But for all that, it is impressive wine with a deep mineral character.
