The 2000 Chablis Vaillons has a lively nose dominated by citrus fruits, mineral, gravel, and flint. This huge, concentrated wine is pure, loaded with candied lemons, minerals, and herbal tea. It has exceptional delineation, superb length, and purity. This wine was vinified and aged 95% in stainless steel cuves and 5% in old barrels. Anticipated maturity: 2003-2011.
