The 2015 Chablis Grand Cru les Preuses comes from 30-year-old vines and spent 20 months on the fine less in stainless steel and oak barrel. It has a gorgeous bouquet, with vibrant apple blossom and granite scents that are precise and intense. The palate is well defined with neatly integrated oak, the acidity very well judged and the second half delivering a very harmonious, lightly spiced, almost Asian-inspired finish. There is plenty of character in this les Preuses, and it comes highly recommended.
