The 2007 SBS is composed of 73% Sauvignon Blanc and 27% Semillon. There was no malolactic fermentation. The excellent perfume reveals notes of minerals, citrus, melon, lime, apple, and a hint of tropical fruits. Crisp and lively, the wine has excellent acidity and a lengthy finish. The Middleton family owns this Walla Walla start-up with plans to plant an estate vineyard in 2008. Their winemaker is Virginie Bourgue, a youthful French ex-pat. Inadvertently playing straight man, I asked her if she missed French cuisine (it’s tough to find in Walla Walla). She said, “No, I cook.”www.cadaretta.com

It’s about 75% Sauv Blanc, 25% Semillon. Lush with bright, fresh flavors of pineapple and grapefruit, it also has good acids with nuances of tangerine, orange and lemon peel.
