    The 2007 Methode Traditionnelle gives notes of spiced apple slices, pear tart and peach blossoms with a subtle toasty / yeasty undercurrent. Light bodied with persistent small sized bubbles, it has a good amount of spicy stone fruit and yeasty flavor in the mouth with plenty of refreshing acidity and a medium-long finish. Drink it now.     Undergoing complete malolactic with 30 months resting on its lees, the 2005 Method Traditionalle Sparkling has a light, floral nose, well defined with touches of white flowers and a little brioche. A vibrant palate, quite commercial but well balanced, reserved on the entry and then building with green apple and citrus notes, leading to quite a dry, conservative finish. An unpretentious but finely tuned sparkler. One of Martinborough’s finest exponents, I think Palliser Estate deserve as much attention as the likes of Ata Rangi and Martinborough Vineyard because these wines deliver time and time again.     Undergoing complete malolactic with 30 months resting on its lees, the 2004 Method Traditionalle Sparkling has a very fine mousse. The nose displays moderate intensity with hints of grapefruit, mango and a touch of melted butter. Moderate definition. A light, peachy palate, good acidity, simple, but well-balanced with a soft, understated, apply finish. Fine, but not exceptional. Palliser Estate is one of Martinborough’s respected names, its first vines planted back in 1984. They presently have 85 hectares under vine with new Pinot Noir Dijon clones (115 and 667) beginning to add more complexity. The winemaker is Allan Johnson, who has overseen the winemaking since 1991 and was voted New Zealand Winemaker of the Year in 2002. Due to time restraints I was unable to visit the estate, so the following notes were all taken single blind in Martinborough and the quality in their superb Sauvignon Blanc, Riesling and Pinot Noir shone brightly.Importer, Negociants USA, Napa, CA; tel.
