The 2012 Bolgheri Rosso Il Bruciato is 65% Cabernet Sauvignon, 20% Merlot and 15% Syrah, aged in oak for eight months. A portion of the Merlot and the Syrah must was fermented at lower temperatures to preserve aromatic freshness. The wine opens to soft layers of bright cherry and forest berry with pretty shadings of spice, licorice and grilled herb. Smooth tannins and bright acidity make this a good pairing partner to oven-roasted lasagna.
