The 2007 Barrica Organic is a blend of Tempranillo, Garnacha, Cabernet Sauvignon, and Merlot aged for 9 months in 33% new French and American oak. A glass-coating opaque purple color, it offers up scents of Asian spices, pencil lead, mineral, scorched earth, and assorted red fruits. This is followed by a medium to full-bodied, chewy, dense, savory wine with enough structure to evolve for 1-2 years. This lengthy effort will be at its best from 2012 to 2019. The 2005 Uncastellum Barrica Organic is a blend of 50% Tempranillo, 30% Garnacha, and the balance Merlot and Cabernet Sauvignon. It was aged for five months in barrel, 25% new. It offers up an impressive nose of wood smoke, pencil lead, cassis, and cherry. This leads to an elegantly-styled wine with a silky texture, sweet fruit, good depth, and a pure finish.
