The 2008 Edom is the winery’s Bordeaux blend, 81% Cabernet Sauvignon, 11% Petit Verdot and 4% each of Merlot and Cabernet Franc, all aged for 14 months in French oak. A touch herbaceous on opening, it comes around pretty nicely and integrates its parts very well. It is nicely crafted, with an elegant mid-palate, good balance and some moderate tannins cropping on the finish. It has the most upside of the releases reviewed in this issue; drink the ‘09 Cabernet early, this one a couple of years later. Not terribly complex, it is nonetheless pleasing and gracious. The 2007 Edom is a blend of Cabernet Sauvignon (59%), Merlot (19%), Cabernet Franc (12%) and Petite Verdot (10%). Revisiting this wine provided some interesting insights. It remains quite elegant and graceful. The tannins pop out with air and provide some subtle grip, but they are much better integrated now. The herbaceous notes have moderated as well, receding into the whole. In many respects, this wine is far more charming now than on release, showing impeccable balance. It usually seems to be fun to drink. Age has had some downside, though. It has thinned and it faded fairly quickly once given some air. After an hour, it became less and less interesting as its lack of mid-palate concentration became an issue. There were times when it began to seem a simply a bit too thin and short. Still, this is quite a friendly wine that has lots of charm. Consider it to be at peak now, although it should hold on a few more years easily enough. Drink now-2015.
