Deep garnet colored with a hint of purple, the 2007 The Baroota Shiraz is scented of warm black berries, stewed plums, forest floor and a whiff of anise. There’s of good amount of mature fruit remaining on the full bodied palate supported by a medium to firm level of chewy tannins and a good acid lift, finishing long and savory. The 2006 Baroota Shiraz comes from the Southern Flinders Ranges, the newest and most northerly GI of South Australia and is considered a warm climate region. The vines are over thirty years of age and yield less than 1.5 tons per acre. The wine was aged in French and American oak hogsheads, 25% new. Deep crimson-colored, it emits an expressive perfume of cedar, pepper, violets, and blueberry. Firm on the palate, this flavorful, structured effort will evolve for several years and drink well through 2021. Owner/winemaker Ross Trimboli buys grapes from many regions with Kangaroo Island being the latest addition to the portfolio.
