The 2014 Paso A Paso Blanco (Organic Grapes) is made from Sauvignon Blanc and Verdejo, and is another wine with no makeup whatsoever, completely fermented and aged in stainless steel. Crisp, straightforward grapefruit notes and other white citrus are present in this light-bodied, dry, clean, correct wine meant for straightforward drinking. Consume it over the next year.

The 2013 Paso a Paso Blanco (Organic Grapes) is 100% Sauvignon Blanc fermented and aged in stainless steel. Notes of crisp grapefruit and melon are offered in a fresh, light-bodied style. Drink this pleasant white over the next 10-12 months.

There are 1,000 cases of the stainless steel-fermented and aged 2012 Paso a Paso Blanco Organic, a 100% Sauvignon Blanc cuvee revealing a textbook varietal character of figs, melons and grapefruit notes. The 2011 Paso a Paso Blanco (Organic Grapes) is 100% Sauvignon Blanc. It exhibits lots of melony fruit intermixed with hints of grapefruit and spice. Drink this light to medium-bodied white wine over the next year. Bodega Volver, a joint project between Rafael Canizares and Jorge Ordonez, produces wines from three appellations, La Mancha, Alicante and Jumilla. Readers will need to take note of the nearly identical cuvees, some of which are made from organic grapes and others from non-organic grapes. That information is clearly marked on the labels.
